OMG! have you seen the new Frito-Lay’s Regional Flavors Potato Chips? They all look soooo good! With flavors like Balsamic Sweet Onion, Tangy Carolina BBQ, and Honey Mustard, these chips won’t last long around our house. My favorite flavor though, is the Garden Tomato & Basil. It makes me think about so many of my favorite dishes, like the tomato basil mozzarella salad served at the restaurant at the Grand Canyon, or the meatball appetizer we love at our favorite pizza place in Flagstaff. But, my favorite dish that I make at home is my Southern Catfish Stew. It is thick and hearty, quick to prepare, and makes me think of lazy days fishing on the banks of Sweetwater Creek in my hometown of Douglasville, Georgia.
Southern Catfish Stew
3 tablespoons olive oil
3-4 cloves garlic, minced
2 stalks celery, chopped
1 med yellow onion, chopped
1/2 teaspoon black pepper
1 teaspoon salt
1 teaspoon basil
1 28 oz can diced tomatoes
1 lb okra, sliced (fresh or frozen)
1 lb catfish fillets, cut in bite sized pieces
Heat the olive oil in a dutch oven. Add the garlic, celery, and onion and sautee until onions are clear. Add all the rest of the ingredients except the catfish. Bring to a boil, then reduce heat to low and simmer for about 45 minutes, covered with the lid. Add the catfish, and simmer another 15 minutes. Serve with rice. Serves 4-6 hungry people.

There’s also less sodium in them than you might think – a 1-oz serving of our Lay’s Regional Flavored potato chips contains less salt than a plain bagel!
