The good folks at Chex® in co-operation with My Blog Spark sent me a nifty gift pack the other day. It included a Lock-n-Lock 4.2 qt plastic storage container, a 2 cup plastic measuring cup with a lid, a set of measuring spoons that measure all the way up to 1/3 cup, a set of recipe cards for making gluten free goodness using Chex® Cereals, and a coupon good for a free box of Gluten Free Chex Cereal. I call that a pretty nifty package!

Last night I made the Gluten Free Triple Berry Mini Cheesecakes. The recipe is here, on the Chex.com website. They were FABULOUS! FabGrandpa asked for seconds! I used the Cinnamon Chex for the crust. I also substituted regular cream cheese for the Neufchatel cheese, only because I live in a sparsely populated area, and the grocery store here did not have any Neufchatel. The next time I make these, I am going to use the Chocolate Chex for the crust. That should be just heavenly!
The recipe was very easy to make–I think even a beginner would be able to make it. I also think they turned really pretty, so much so that I would make them for a shower or for a wedding reception. And oh, that cheesecake taste! Mmmmmmm…….
There are five Chex® varieties that are gluten free: Rice Chex, Corn Chex, Honey Nut Chex, Chocolate Chex, and Cinnamon Chex. As a reminder, please be sure to check the label when buying any gluten-free cereal to make sure it does not have any ingredients that contain gluten.
