When I got this package in the mail, I couldn’t decide where to start. The first thing I tried was the Creamy Ranch Soy Crisps. It was the first time I had ever tried a soy crisp, so I was pleasantly surprised at the crunchy texture, and the taste of them. I will definitely be buying some of these. The Barbecue flavor was my favorite, which was surprising to me because I don’t like barbecue potato chips.

Nutrition Facts for Soy Chips (Creamy Ranch flavor):

Calories per serving: 70 (2) servings per 1.3 oz bag, Total Carbohydrate 9 grams

Ingredients: Low fat non-GMO soy flour, rice, buttermilk powder, cheddar cheese powder, (pasteurized milk, cheese cultures, salt, enzymes, whey, maltodextrin, soybean oil, buttermilk, citric acid, natural flavors, disidium phosphate, lactic acid), mid oleic sunflower oil, sea salt, tomato powder, autolyzed yeast, onion powder, dextrose, garlic powder, dehydrated cane juice, natural flavor, malic acid, spice, sodium diacetate.

The second thing I tried was the Gluten Free Oatmeal Raisin Cookies. They were moist, and soft, and tasted to me like  “real” (wheat) cookies. My non-gluten free husband ate the entire box except for the one I ate to try them out. For him to keep going back to these cookies, when he had some regular cookies in the house, says a lot for the taste and texture of them.

Nutrition Facts for Gluten Free Oatmeal Cookies:

Calories per 2 cookie serving: 110 Total Carbohydrate 18 grams

Ingredients: Gluten Free Rolled Oats, Brown Rice flour, raisins, organic sugar, canola oil, eggs, egg whites, cinamon, salt, natural flavors, sodium bicarbonate, baking powder (monocalcium phosphate, sodium bicarbonate, corn starch), vanilla.

Chicken and Garlic with Swiss Chard

I made one of our favorite chicken recipes: Chicken and Garlic over Gluten Free Pasta. You can use any green vegetable in this dish–tonight I used Swiss Chard. I have used asparagus, green beans, broccoli, and zucchinni at different times, and they all taste good in this.

Chicken & Garlic With Swiss Chard Over Gluten Free Pasta

1 bag Tyson® Grilled & Ready™ Frozen Chicken Breast Strips

1 garlic bulb, divided into cloves, peeled, and sliced

3 tablespoons olive oil

1 bunch Swiss Chard, cleaned and chopped, including stalks

salt and pepper to taste

12 oz your favorite gluten free pasta

Steam the Swiss Chard until desired doneness. I steam mine by putting it in a bowl, add about 1/8 cup of water, cover with plastic wrap, and put in microwave for 10 minutes.  Meanwhile, sautee′ the garlic in olive oil for about three minutes. Add Tyson’s Grilled & Ready Chicken Breast Strips, and continue to cook for about 5 more minutes. Stir in steamed Swiss Chard, and cook for 1-2 minutes more to blend flavors. Salt and pepper to taste.

I serve this with a home made Gluten Free Chinese sauce:

3 tablespoons corn starch

1/8 cup sugar

1 1/2 cups water

1 teaspoon Chinese Five Spice Powder

1/2 teaspoon ground ginger

3-4 tablespoons Gluten Free Soy Sauce

Stir all ingredients together well in a 2 cup glass measuring cup. Place in microwave and heat for 1 minute. Stir. Continue to cook in 1 minute increments, then stirring, until sauce is thick and shiny.

Gluten Free Basics: Seafood

One of the first things I did when I found out I needed to eat a gluten free diet was try to find out just what exactly I COULD eat. Having a positive attitude about things you can eat as opposed to obsessing over what you can’t eat is the first step in learing to love your new way of eating.

Fortunately for me, seafood is one of the many naturally gluten free food groups. Just make sure you use all gluten free ingredients when preparing your favorite seafood. I often buy oysters, shrimp, fish, and crab because they can be served in a variety of ways. For instance, oysters can be breaded with corn meal and fried; stirred into a milk based stew, or raw atop a gluten free cracker they are oh so good!

If you live in an area that does not have a seafood shop, you can order seafood online from any number of websites.  One of my favorite online seafood shops is I Love Blue Sea. They have my very favorite seafood , Dungeness crabs!

Here is my Gluten Free Oyster Stew Recipe:

1 pint oysters

1 can carnation milk & 1 can water

2 cup milk

salt & pepper

½ stick margarine

Heat milk to boiling–do not scorch.  Add salt & pepper & margarine.  Let butter melt in milk.  Add oysters & cook only until edges curl.

If you have been looking for a delicious Italian gluten free meal, it is finally here! I received six different meals from Caesar’s to try out. So far, I have had the Manicotti with Cheese in Marinara Sauce, and the Stuffed Shells with Cheese in Marinara Sauce. Both of these have been sooo good!

Before I started eating a gluten free diet, I used to make stuffed shells about once every other week. Caesar’s taste just as good as I remember mine being, and they are much easier to prepare. Just take them out of the freezer, cut a slit in the plastic wrap on top of the package, and microwave for 7 minutes. The 11 oz. package is just the right size for dinner with a salad and a slice of gluten free bread, or take it for lunch for a quick and filling meal.

Caesar’s Pasta Gluten Free Stuffed Shells with Marinara Sauce has 370 calories with 37 grams of carbohydrate. Ingredients: Water, concentrated crushed tomatoes, onions, flour (rice flour, corn starch, tapioca flour, and xanthan gum), whole milk ricotta cheese (pasteurized cheese whey, whole milk, vinegar, and salt),canola oil, organic evaporated cane juice, garlic,part skim mozzarella cheese, (pasteurized milk, cheese cultures, salt, and enzymes), pasteurized egg whites, salt, romano cheese (sheep’s milk, sheep’s rennet, and salt) basil, red pepper, black pepper, oregano, and parsley.

Frito-Lay Snacks (The Sun Chips are NOT Gluten Free)

When my husband and I travel, we like to grab a quick snack when we stop for gas, and sometimes it is just plain difficult to find something that does not have gluten in it. As a person who eats a gluten free diet, I was glad to learn that quite a few of Frito-Lay products are gluten free. While I have always known that potato chips are, it has been hard to determine what else is safe to eat. Luckily, Frito-Lay has an enormous list of their gluten free and wheat free products listed on their website! This list was updated January 2011, so it is up to date as of today. Please note, in the photo above of the products they sent me, the Sun Chips are NOT gluten free, but my husband loved them!

Here are some fun facts to know about Frito-Lay:

·         Frito-Lay starts with fresh, farm-grown ingredients, making many of our chips with just three simple ingredients: potatoes or corn, all-natural oils and salt.

·         Frito-Lay was the first major food company to remove partially hydrogenated oils from our cooking oil way back in 2003. That means Frito-Lay chips have 0 grams trans fat because we use all-natural oils such as corn oil and sunflower oil.
